Hummus  

2 pounds cooked chickpeas

1/2 cup tahini paste 

3 cloves garlic, crushed 

5 tablespoons lemon juice (use some bottled lemon juice as a preservative if desired) 

1 teaspoon salt

1/2 cup chopped parsley

Olive oil

Pita bread

In a food processor mix together all the ingredients until smooth and soft texture.  Add some water if too thick or more tahini paste if too thin and adjust the flavor with more lemon or salt if necessary.  Garnish with olive oil and chopped parsley and serve with pita bread

Ground lamb for the hummus

1 pound of ground beef 

1 pound of ground lamb 

1 chopped onion 

5 chopped garlic cloves 

5 spoons of chopped parsley 

3 spoons of olive oil 

2 spoons of ground cumin     

2 spoons of ground paprika      

1/2 spoon of salt 

Heat the oil in a large frying pan over medium heat. Sauté the onion until soft, turn up the heat, add the ground meat, garlic, spices and salt, Stir for about 10 minute until well cooked and golden brown.Add the chopped parsley and serve with hummus and pita bread. 

Mushrooms for the hummus

1 pound of sliced mushrooms  

1 sliced onion 

3 chopped garlic cloves 

4 spoons of olive oil 

1 spoons of ground cumin     

1/2 spoons of ground paprika      

1/4 spoon of salt

5 spoons of chopped parsley  

Mix well together all the ingredients except the parsley.Spread over a large sheet pan and bake in a very hot oven until its nice crispy golden Brown, About 20 minutes. Add the chopped parsley and serve with hummus and pita bread. 

As we say in Hebrew ... B'teyavon (bon appetite)
